Repeat with the remaining tortillas until the all the mix is used.  It should make 9 or 10 enchiladas. Spread another cup of salsa over the enchiladas and sprinkle it with the remainder of the cheese.&lt;/li&gt;&lt;li&gt;Cover pan with aluminum foil. &amp;nbsp;Bake at 400° for 20 minutes. Roast for 20 to 25 minutes; stirring every 5 minutes, or until the onions are golden.&amp;nbsp;&lt;/li&gt;&lt;li&gt;Remove from oven and pour in one-fourth of the chicken stock. Stir liquid in the pan, scraping the bottom to loosen and dissolve any caramelized&amp;nbsp;bits.&amp;nbsp;&lt;/li&gt;&lt;li&gt;Transfer the onion mixture to a soup pot and add brandy, thyme and the remaining chicken stock. Pour batter into one greased and floured 9x13 inch baking pan.&lt;/li&gt;&lt;li&gt;Do not preheat oven. Place uncooked cake in oven and turn oven on to 350 degrees F (175 degrees C). Bake for 1 hour. Add onion, garlic, potato, celery and carrot. Cook on medium heat for 3-5 minutes. Add tomatoes and cook an additional 3 minutes.&lt;br /&gt;Add broth, beans, pasta, thyme, salt and pepper. &lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;img src="http://4.bp.blogspot.com/-krTAZ0f6AC4/TeewhNWag8I/AAAAAAAAZL0/ynVBpnWsKjI/s400/IMG_6328.jpg" /&gt;&lt;/div&gt;&lt;br /&gt;This morning I had 4 very ripe bananas staring at me. &amp;nbsp;What to do , what to do? &amp;nbsp;They were too ripe to slice, so I decided to make Banana Nut Bread. &amp;nbsp;I went to my recipe file and discovered I was missing ingredients for my two favorite&amp;nbsp;Banana Nut Bread recipes. &amp;nbsp;So, I did what any modern cook would do, I went on the internet to find a recipe that used the ingredients I had. &amp;nbsp;I found this recipe &lt;a href="http://simplyrecipes.com/recipes/banana_bread/"&gt;here&lt;/a&gt;, and simply added walnuts.&lt;br /&gt;&lt;br /&gt;Mrs. Hockmeyer’s Banana (Nut) Bread&lt;br /&gt;&lt;br /&gt;Prep time: 5 minutes&lt;br /&gt;Cook time: 1 hour&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;• 3 or 4 ripe bananas, smashed&lt;br /&gt;• 1/3 cup melted butter&lt;br /&gt;• 1 cup sugar (can easily reduce to 3/4 cup)&lt;br /&gt;• 1 egg, beaten&lt;br /&gt;• 1 teaspoon vanilla&lt;br /&gt;• 1 teaspoon baking soda&lt;br /&gt;• Pinch of salt&lt;br /&gt;• 1 1/2 cups of all-purpose flour&lt;br /&gt;• 1 cup chopped walnuts&lt;br /&gt;&lt;br /&gt;METHOD&lt;br /&gt;No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour and walnuts last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Canola oil&lt;/li&gt;&lt;li&gt;3 tbsp. orange juice&lt;/li&gt;&lt;li&gt;2 eggs&lt;/li&gt;&lt;li&gt;1/2 c. chopped walnuts&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 325 degrees. The crust is crisp and the inside is soft and flavorful.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;BANANA - WHEAT QUICK BREAD&lt;br /&gt;&lt;br /&gt;2 c. flour&lt;br /&gt;3/4 c. whole wheat flour&lt;br /&gt;1 1/2 c. sugar&lt;br /&gt;1 1/2 tsp. soda&lt;br /&gt;1 1/2 tsp. salt&lt;br /&gt;2 thinly sliced ripe bananas&lt;br /&gt;1/3 c. butter, softened&lt;br /&gt;3 tbsp. orange juice&lt;br /&gt;2 eggs&lt;br /&gt;1/2 c. chopped walnuts&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 325 degrees. Butter and flour a loaf pan. In a medium bowl, whisk all the dry ingredients together, set aside.  In large bowl, blend the "wet ingredients together. Slowly stir in the dry mix.  When blended, beat mixture 3 minutes at medium speed with a hand mixer. Pour into greased pan. Bake 60 to 65 minutes or until done. Cool on wire rack for 5 minutes, then remove from pan. Add carrot, celery and water bring to a boil; lower heat to a low boil and cover.  Simmer for about 15 minutes, until carrots are done.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;Remove chicken, keep warm in covered dish.  Use a potato masher to break-up any large pieces of vegetable in the broth.  Bring broth back to a slow boil.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;In a small bowl, mix Bisquick and milk, forming a soft ball.  Drop mixture into simmering broth, you should have eight dumplings. This can also be served over a bed of greens.&lt;br /&gt;&lt;br /&gt;Greek Bean Salad&lt;br /&gt;&lt;br /&gt;2 c. green beans, trimmed, cut to about 3 inch lengths&lt;br /&gt;4 c. coarsely chopped tomato, 4-5 medium.&lt;br /&gt;1 c. thinly sliced red onion&lt;br /&gt;½ c. crumbled feta cheese&lt;br /&gt;1 can (15 ½ oz) garbanzo beans, rinse and drained&lt;br /&gt;&lt;br /&gt;Cook green beans in boiling water, 3 minutes. Drain and plunge into ice water. Drain. Place in large bowl.&lt;br /&gt;&lt;br /&gt;Add remaining ingredients, mix lightly and cover. Cook pasta, following package directions, drain thoroughly.&lt;br /&gt;2. Put pasta in large bowl, immediately toss with shredded spinach.&lt;br /&gt;3. It's assembled the night before, and popped in the oven in the morning.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Caramelized Apple French Toast&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1 c. brown sugar&lt;br /&gt;3 tbsp. light Karo syrup&lt;br /&gt;6 tbsp. butter&lt;br /&gt;3 Granny Smith Apples, peeled, cored and sliced&lt;br /&gt;18 slices day old white bread&lt;br /&gt;6 eggs&lt;br /&gt;2 c. milk&lt;br /&gt;1/2 tsp. vanilla&lt;br /&gt;&lt;br /&gt;Combine sugar, syrup and butter; boil in pan for 1 minute. Pour into greased 9 x 13 pan. Place sliced raw apples on top of caramel. Place bread 3 layers deep in pan. Mix eggs, milk and vanilla together. Pour over bread.&lt;br /&gt;&lt;br /&gt;Refrigerate overnight. Bake at 350° for 45 minutes until brown and slightly puffy.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;This photo was from when I was interviewed by our local newspaper, The Press-Enterprise, about this recipe. It's a hit whenever you serve it.&lt;br /&gt;&lt;br /&gt;Jan’s Apple Cake&lt;br /&gt;&lt;br /&gt;1 cup coarsely chopped walnuts&lt;br /&gt;2 cups flour&lt;br /&gt;2 teaspoons baking soda&lt;br /&gt;3/4 teaspoon salt&lt;br /&gt;2 teaspoons cinnamon&lt;br /&gt;2 eggs, beaten&lt;br /&gt;1/4 cup granulated sugar&lt;br /&gt;2 cups brown sugar&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;1/2 cup corn oil&lt;br /&gt;1/2 cup water&lt;br /&gt;4 cups pippin apples, unpeeled, cored and cut into 1/2-inch cubes&lt;br /&gt;Powdered sugar for dusting&lt;br /&gt;&lt;br /&gt;1. Heat the oven to 325 degrees.&lt;br /&gt;&lt;br /&gt;2. Sift together the flour, baking soda, salt and cinnamon. (Double shift).&lt;br /&gt;&lt;br /&gt;3. In a mixing bowl, blend the beaten eggs, white sugar, brown sugar, vanilla, corn oil and water until the ingredients are just combined. Then stir in the flour mixture and toasted nuts. When thoroughly blended, add the apples and stir.&lt;br /&gt;&lt;br /&gt;4. Pour the batter into a greased 9-by-13-inch baking pan and bake until a toothpick inserted in the center comes out dry, 50 to 60 minutes. The cake will appear moist but not wet. Add broth and tomatoes, un-drained. Add remaining ingredients and bring to a boil. Turn down heat, and simmer for 15-20 minutes until the potatoes and carrots are tender. Today, my friend Tom told me he lost his copy of my recipe, and I told him to get it from this blog. Low and behold, it wasn't here, until now. Sorry about that. This is both fast and easy to prepare, and delicous and healthy.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div align="left"&gt;&lt;/div&gt;&lt;div align="left"&gt;&lt;strong&gt;White Bean Soup&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;¼ c. vegetable oil&lt;br /&gt;1 onion, chopped&lt;br /&gt;2 stalks celery, diced&lt;br /&gt;1 heaping T. bottled minced garlic&lt;br /&gt;1 ham slice, diced&lt;br /&gt;24 oz chicken broth&lt;br /&gt;4 cans white beans, drained&lt;br /&gt;Salt and pepper&lt;br /&gt;&lt;br /&gt;Heat vegetable oil in large pan or Dutch oven. Sauté onion and celery until soft. Add garlic and ham, stir and simmer until heated thru. Add chicken broth and beans, heat to simmer. It got me to thinking that I hadn't made it for a long time. Now that I'm home convalescing, I decided to make one. But, there was no longer a recipe on the Bisquick box! What to do, what to do? Google, of course. None of the listings were exactly what I remembered, but they were a starting place. This is what I came up with:&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bisquick Coffee Cake, the Lighter Version&lt;br /&gt;&lt;/strong&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Heat oven to 375 degrees. Spray cooking oil on 8 or 9 inch square pan.&lt;/li&gt;&lt;br /&gt;&lt;li&gt;Make Streusel Topping&lt;/li&gt;&lt;br /&gt;&lt;li&gt;Make batter&lt;/li&gt;&lt;br /&gt;&lt;li&gt;Pick your &lt;span style="color:#660000;"&gt;option&lt;/span&gt;.&lt;/li&gt;&lt;br /&gt;&lt;li&gt;Bake for 20-22 minutes, testing with a toothpick. There was only one vegetarian among us, but everyone loved it and didn't give a thought to the lack of meat.&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Black Bean Burrito Bake &lt;/div&gt;&lt;br /&gt;&lt;p&gt;1 Chipotle chili in adobo sauce, seeds removed&lt;br /&gt;½ cup reduced-fat sour cream&lt;br /&gt;15 oz can black beans, rinsed&lt;br /&gt;1 cup frozen white corn, thawed&lt;br /&gt;5 flour tortillas, burrito size&lt;br /&gt;1 cup mild salsa&lt;br /&gt;1 cup shredded Jack cheese&lt;/p&gt;&lt;div&gt;Heat oven to 350 degrees. Spray baking dish with cooking oil.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Chop chili, add to sour cream in medium bowl, let stand 10 minutes.Add beans and corn to sour cream mixture. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;Divide bean mixture, and spoon down the center of each tortilla. Heat oil in Dutch oven; add onions and sauté until slightly brown and tender.&lt;br /&gt;2. Add broth to pot&lt;br /&gt;3. Stir in tomatoes, veggies and chicken.&lt;br /&gt;4. Simmer to blend flavors for 15 minutes&lt;br /&gt;5. Layer potatoes and onions and cheeses alternately in about 4 layers. &lt;/p&gt;&lt;p&gt;In a saucepan over medium heat, melt butter. When completely melted, add flour and mix well. Then add milk, mixing well. Heat for another minute, and remove from flame. Stir in salt and pepper. &lt;/p&gt;&lt;p&gt;Pour milk mixture over potato and cheese layers in the Crock Pot. Icing is nice but for the mornings I like it plain.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;strong&gt;Rippled Coffee Cake&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;br /&gt;&lt;/strong&gt;1 package yellow cake mix&lt;br /&gt;1-cup low fat sour cream&lt;br /&gt;4 eggs&lt;br /&gt;2/3-cup vegetable oil&lt;br /&gt;1 cup packed brown sugar&lt;br /&gt;1 T. ground cinnamon&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Icing:&lt;br /&gt;&lt;/strong&gt;2 cups confectioners’ sugar&lt;br /&gt;¼ cup milk&lt;br /&gt;2 t. vanilla extract&lt;br /&gt;&lt;br /&gt;Heat oven to 350 degrees. Grease a 13 x 9 inch baking pan.&lt;br /&gt;&lt;br /&gt;In a mixing bowl, combine cake mix, sour cream, eggs and oil; beat well. Spread half of the batter into baking pan. Combine brown sugar and cinnamon; sprinkle over batter. Carefully spread remaining batter on top. Grease and flour a 9 x 13 – inch pan.&lt;br /&gt;&lt;br /&gt;In a large bowl, combine cake mix, water, oil and egg whites until smooth; gently stir in crushed cookies. Pour batter into pan.&lt;br /&gt;&lt;br /&gt;Bake 30 - 35 minutes, or until toothpick inserted in center comes out clean. I gave it to him when he was going to college in Wyoming. It is really easy to make, and no roux to cook!&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: 'trebuchet ms';"&gt;&lt;br /&gt;&lt;span style="color: #339999;"&gt;&lt;strong&gt;Famous Mac and Cheese&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;2 Cups Large Elbow Macaroni&lt;br /&gt;2 Cups grated Sharp Cheddar&lt;br /&gt;2 Cups grated Jack Cheese&lt;br /&gt;2 large eggs&lt;br /&gt;non-fat milk&lt;br /&gt;salt, pepper, &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;paprika; a few shakes of each&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;Pre&lt;/span&gt;-heat oven to 375 degrees. Spray baking dish with oil.&lt;br /&gt;&lt;br /&gt;Cook macaroni according to package directions, in boiling salted water. When done pour in large glass of ice water, then drain in colander.&lt;br /&gt;&lt;br /&gt;While macaroni is cooking, grate cheese.&lt;br /&gt;&lt;br /&gt;Break eggs into 2 cup measuring cup, whisk well. Add milk to measuring cup, up to 2 cup mark. Add seasonings and whisk well.&lt;br /&gt;&lt;br /&gt;Assembly - put 1/2 cooked macaroni in baking dish, sprinkle with 1/2 cheddar cheese and 1/2 jack cheese. Repeat. Pour egg mixture over all, and bake for 3-45-60 minutes, until a knife inserted into the center comes out clean. Grease and flour three 10-inch round cake pans or a 9x13” pan.&lt;br /&gt;&lt;br /&gt;In a large bowl with a spoon, mix flour, sugar, baking soda, cinnamon and salt.&lt;br /&gt;&lt;br /&gt;In a small bowl, with a fork, beat eggs slightly. Stir in saladoil and vanilla extract. Stir egg mixture, shredded carrots, walnuts and crushed pineapple into flour mixture just until&lt;br /&gt;flour is moistened.&lt;br /&gt;&lt;br /&gt;Pour batter into pan(s). Bake 40-45 minutes until toothpick comes out clean. Cool cake in pans on wire racks for 10 minutes. Remove cake from pans; cool completely on racks.&lt;br /&gt;If using large pan, do not remove from pan.&lt;br /&gt;&lt;br /&gt;When cake is cool, frost with Creamy Cheese Frosting (below).&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family:trebuchet ms;"&gt;&lt;strong&gt;Creamy Cheese Frosting&lt;br /&gt;&lt;/strong&gt;&lt;br /&gt;In large bowl, with mixer at medium speed, beat 12 oz package of cream cheese (softened), 1/2 c. butter (softened), 1 tbs. lemon juice and 1 1/2 tsp. vanilla extract until smooth. Let the mixture cook on high until the pieces start to brown, then stir and continue to brown the vegetables, stirring only when the bottom pieces start to turn color (this should take about 10-12 minutes). &lt;/p&gt;&lt;p&gt;Stir in the chicken broth and heat just until boiling. Press into the bottom of one 9x13 inch pan and bake at 350 degrees for 12 to 15 minutes. Remove from oven, pour chocolate chips evenly over top of cake. Return to oven for 2 minutes. Drizzle with melted butter.
