Corn Casserole

This is a super easy yummy side-dish. I served it at Thanksgiving to rave reviews.

CORN CASSEROLE

1 can cream corn
1 can strained sweet corn or use your empty cream corn can to measure enough fresh or frozen corn.
1 stick of melted butter
2 eggs
1 small box of Jiffy cornbread mix
1 8oz. container of sour cream

Mix all the ingredients in a casserole dish, and bake uncovered in a preheated oven at 350 degrees for 1 hour. Serves 10-12.

I came to your profile looking for the blog to which you posted your RT and found this one. I love corn chowder so I had to check out the recipe. Which sounds delicious and easy. I have to try it!

When I grow up, I too want to work at Barnes & Noble and be otherwise retired! :-)
